Veena V, a chief clinical dietitian at Aster Whitefield Hospital in Bengaluru, gives us the lowdown on UHT milk: “Tetra Pak, or ultra-high temperature (UHT) milk, is milk that has been treated by ultra-high temperature processing in order to be stored for a long time under normal conditions without requiring refrigeration until the package is opened.”

Picture this: milk being blasted with temperatures hotter than the surface of Venus (okay, not quite, but close) at 135°C to 150°C. This cosmic heat zaps away all the nasties, allowing the milk to boldly go where no milk has gone before – onto unrefrigerated shelves for months on end.

Dr. Nimra Choudhary, a general physician at Prakash Hospital, NCR, weighs in on the safety debate: “Both UHT and pouch milk are safe and nutritionally similar. UHT milk undergoes more processing but remains safe due to the high heat, which kills bacteria. Pouch milk may be preferred for its fresher taste, but both are healthy options.”

But what about those precious nutrients? Are they casualties in this heat treatment war? Studies show that UHT processing does cause some protein changes, with these milk molecules doing a molecular dance of unfolding and sticking together. It’s like a protein rave party in there! However, fear not – most of the nutritional goodness survives the heat.

Does milk in packaging contain nutrients?

Veena V reassures us, “Research proves that the protein levels in UHT milk are mostly unscathed because the high heat treatment affects only certain vitamins, like Vitamin B12 and Vitamin C, which lead to spoilage of milk over time. In addition to this, UHT milk is also suggested for some people as a nutritionally beneficial option because a large portion of the nutrients, including other macro minerals like calcium and phosphorus, are still found in the milk even after processing.”

So, which milk should you be putting in your shopping cart? Well, it depends on whether you’re Team Convenience or Team Fresh-and-Creamy.

If you’re always on the go, with a fridge as empty as your social calendar during lockdown, UHT milk might be your dairy knight in shining armour. It’s perfect for those “just in case” moments and reduces the risk of crying over spoiled milk.

But if you’re all about that farm-fresh flavour and don’t mind frequent fridge restocks, pouch milk is your creamy companion. Its less processed nature means it retains more of those natural enzymes and flavours, giving you a thicker, creamier experience that might make your taste buds do a happy dance.
